changing dietary patterns in japan are reviewed in relation to characteristics such as age, sex, educational status, occupation, region, and migration. data are from a field survey undertaken in miyagi and kumamoto prefectures in 1981. the focus is on the change from a traditional japanese rice-based diet to a western style of nutrition.
